GFCF Diet Recipe – Gluten-Free Graham Crackers
Makes 20 crackers
GFCF Diet Recipe – Ingredients
Dry ingredients:
2 1/4 cups all-purpose, gluten-free flour mix
1/3 cup nonfat milk powder
1/4 tsp baking soda
1 tsp cinnamon
pinch of salt
Wet Ingredients:
3/8 cup honey
1/3 cup coconut oil
1 Tbsp molasses
1 tsp cider vinegar
1 Tbsp vanilla
2 Tbsp water
GFCF Diet Recipe – Instructions
1. Mix dry ingredients in a medium bowl.
2. In a separate bowl, mix wet ingredients.
3. Combine wet and dry ingredients thoroughly with spoon. Dough shouldn’t be too dry, but firm enough to form into a ball.
4. Cover loosely with plastic wrap place in freezer for 10 minutes.
5. Grease a large cookie sheet and dust lightly with gluten-free flour. Place dough on cookie sheet, cover with plastic wrap and roll out to 1/8-inch thickness.
6. Score into 20 rectangles.
7. Take a large fork and prick holes across the crackers.
8. Bake in preheated over at 350 degrees F for 8-10 minutes. Remove outer crackers if they are browning too quickly, then continue to bake for a further 5-10 minutes, until golden.
9. Move crackers to cooling rack and let cool completely.
